The default shipping bins for items can be set for each warehouse.  This is done on the Location Management screen, which is found in the Warehouse Manager.  The Holding Bins section of the screen shows you the bins that currently exist for each type.  If a bin is currently set as the default, it will say Default Bin in parenthesis next to it.

If you would like to specify a different bin as the default, simply right-click it.  You will be given the option to Set as Default Bin.  Choose that option, and it becomes the default for the selected warehouse.

Furthermore, you can specify the default Moving Bin and Suspect On Hand Bin for a workstation that is in Point Of Sale mode.  These are per-workstation settings that override the corresponding default bins in Location Management.  The settings can be found on the Point Of Sale tab in the Settings screen.  These settings only take effect if Point Of Sale System is checked.
